It’s ALL about Kale, Kale, Kale!!!

An Amazing factoid about this SUPER FOOD is that kale tops the charts of nutrient density, it possesses total culinary flexibility, and is easy to grow wherever you choose to.

Being that I personally battle with Multiple Sclerosis, my personal ultimate measure of a food is its power to support brain health. The more kale in your diet means a happier, healthier, sexier you! These are true signs telling you that your brain is running beautifully.

There is an amazing miracle in every single crunch, especially because of  the power of phytonutrients, the molecules in plants that do amazing things.

You might be asking yourselves, just how much goodness is really packed into kale? Well just one cup of chopped kale contains 33 calories along with 9% of the daily value of calcium, 206% of vitamin A, 134% of vitamin C, and a staggering 684% of vitamin K! And as if that was not enough, it is also a good source of minerals like copper, potassium, iron, manganese, and phosphorus.

The health benefits of kale are linked to the high concentration and excellent source of antioxidant vitamins A, C, and K along with sulphur-containing phytonutrients. The carotenoids and flavonoids (which are specific types of antioxidants) are associated with many anti-cancer health benefits. Kale is also known to bind bile acids, help lower cholesterol and greatly reduce the risk of heart disease. Especially when kale is cooked instead of raw!

Eating a diet consisting of a very powerful antioxidant such as vitamin K, can greatly overall reduce the risk of developing or dying from cancer, according to a study in the American Journal of Clinical Nutrition.

Vitamin K is necessary for a wide variety of bodily functions, including normal blood clotting, antioxidant activity, and bone health.

But please be aware that too much vitamin K can pose problems for some people. Anyone taking anticoagulants should avoid kale because the high level of vitamin K can possibly interfere with the drugs. Consult your doctor before adding kale to your diet.

Kale might be a powerhouse of nutrients but it also contains oxalates, naturally occurring substances that can interfere with the absorption of calcium.  So to avoid this issue, try not eating calcium-rich foods such as dairy at the same time as kale to prevent any problems. 

The Benefits of Kale:

1. Anti-inflammatory: Inflammation is the number one cause of arthritis, heart disease and a number of autoimmune diseases, and is triggered by the consumption of animal products. Kale is an incredibly effective anti-inflammatory food, potentially preventing and even reversing these illnesses.

2. Iron: Per calorie, kale has more iron than beef.

3. Calcium: Dairy and beef both contain calcium. Kale contains more calcium per calorie than milk (90 grams per serving) and is also better absorbed by the body than dairy.

4. Fiber: Like protein, fiber is a macronutrient, which means we need it every day. But many Americans don't eat nearly enough and the deficiency is linked to heart disease, digestive disorders and cancer. Protein-rich foods, like meat, contain little to no fiber. One serving of kale not only contains 5 percent of the recommended daily intake of fiber, but it also provides 2 grams of protein.

5. Omega fatty acids: Essential Omega fats play an important role in our health, unlike the saturated fats in meat. A serving of kale contains 121 mg of omega-3 fatty acids and 92.4 mg of omega-6 fatty acids.

6. Immunity: Superbug and bacteria are a serious risk to our health.  Kale is an incredibly rich source of immune-boosting carotenoid and flavanoid antioxidants including vitamins A and C to help us battle these bugs and bacteria.
